More with Less Mom’s post June Real Food Plan is just full of flexible recipes. She has a great system for meal planning that reminds you to use the more perishable ingredients first. I try to do this when I meal plan for each week.
Life of a Southern Mom simplifies this week’s meal plan by giving you Loaded Potato and Buffalo Chicken Casserole. This is a one dish meal with very little hands-on time. It sounds like a real crowd pleaser—her readers share in the comments that their families love the recipe!
Want a hearty breakfast option? You could make Chorizo and Sweet Potato Hash ahead of time and have a great meal to grab before running out the door to summer camp or swimming lessons. From This Kitchen Table even gives a chorizo recipe option, so you can make your own healthier version.
Speaking of more nutritious choices, Skinny Fitalicious created a Lightened Up Chicken Parmesan recipe that is gluten free and low calorie; it sounds just delicious! This lighter dish is a great option for hot summer nights 🙂
Speaking of heat, Nepamom shares her recipe for Italian Pasta Salad and 10 Tips to Beat the Heat. This is a cool dish for this hot time of year, but I’d also love to throw in some fresh veggies to add some crunch and fresh flavor!
Talk about fresh! This is the season for fresh corn—just today it was on special at our neighborhood Safeway. Just in time, The Gracious Wife shares 23 Amazing Corn Recipes (everything from salads to salsas, or straight to the grill). In addition to the amazing flavor combinations, I love the visual appeal of these recipes (maybe because corn-yellow is such a cheery color?).
