I Dig Pinterest’s Quinoa & Spinach Salad w/Lemon Vinaigrette rises to the challenge, the recipe challenge that is…She created an original recipe from a list of ingredients for the May Mystery Dish Challenge.  Yum!

Deviled Egg Salad looks so fresh and delicious! This simple recipe by Craft Journal can be used on crackers, on toast, or as a ready-made breakfast. Go protein! I think it would be wonderful on a bed of lettuce too.

Salad for a week, for a family of four! Sweet Little Ones Blog recommends prepping the items and storing them separately in the fridge until ready to eat. I love her recommmendation of the Simple Summer Caesar Salad with a hot pasta dish too.

A Life in Balance shares an easy recipe to get your little ones in the kitchen with you—Cooking with Kids: Tomatoes with Mozzarella and Basil Salad. This is one of my very favorite summer salads. So easy, yet it feels so fancy. 😉

This Buffalo Chicken Salad will give you a restaurant-style dish to serve to your family and friends and it is such an easy recipe. The Gracious Wife uses store-bought chicken tenders—it’s very clever! Wouldn’t this be a fun option for a summer ladies’ luncheon?

Here’s another choice for our ladies’ luncheon, from Crafty Allie: Southwest Chicken Salad. I love her homemade cilantro dressing—it finishes the dish off with just the right touch!

When the first day of school is also the day your When the first day of school is also the day your firstborn drives herself to college, it’s a lot. We moved her stuff into her dorm last week. Today she got up early to say goodbye to Dad (too early! Not pictured 😂), her brother, her doggo, her piano, and her momma. Before she left, she made blueberry scones to share with her little bro @sjoshlafont —they homeschool and relocated together, went to @westminsteroakmtn together, and have shared a love of music, Legos, superheroes (and villains), Transformers, and so much more. She played my favorite song. She even made banana bread to bring to her new roomie. @graciethenerd You are my little nut brown hare, and I love you to the moon and back. Auburn University is a better place because you are there! ❤️
